Here’s what you’ll need to make this delicious dish:

  • Boneless Skinless Chicken Breasts: I usually use about 3-4 chicken breasts, but you can adjust the amount depending on how many people you’re feeding
  • Fresh Garlic: Choose firm, fresh garlic cloves for the best flavor
  • Fresh Ginger: Use peeled ginger root; it adds warmth and depth to the soup
  • Coconut Milk: Look for full-fat coconut milk for creaminess and richness in the broth
  • Chicken Broth: Use low-sodium chicken broth to control salt levels in the dish
  • Lime Juice: Freshly squeezed lime juice brightens up the flavors beautifully
  • Vegetables (Bell Peppers & Carrots): Cut into thin strips; they add color and texture

For the Sauce:

  • Soy Sauce: Use low-sodium soy sauce to better control the saltiness

Step 1: Prepare the Ingredients

Start by gathering all your ingredients. Chop the chicken breasts into bite-sized pieces and mince the garlic and ginger.

Step 2: Sauté Aromatics

In a large pot over medium heat, add a splash of oil. Once hot, sauté minced garlic and ginger until fragrant—about one minute.

Step 3: Add Chicken

Add chopped chicken pieces to the pot. Cook until they turn white on all sides—approximately five minutes.

Step 4: Pour in Broth

Pour in the chicken broth along with coconut milk. Stir well to combine all ingredients.

Step 5: Incorporate Vegetables

Add bell peppers and carrots into the pot. Allow everything to simmer for about ten minutes until vegetables are tender.

Step 6: Finish with Lime Juice

Remove from heat and stir in freshly squeezed lime juice along with soy sauce for added flavor.

Ingredients
  • - ½ onion, chopped

  • -¼ cup chopped fresh parsley

  • -1 tablespoon butter

  • -1 clove garlic, minced

  • -3 tablespoons all-purpose flour

  • -2 ½ cups milk

  • -1 cup chicken broth

  • -2 (12 ounce) cans whole kernel corn, drained

  • -2 ½ tablespoons cream cheese

  • -1 teaspoon garlic salt

  • -1 teaspoon ground black pepper

  • -ground cayenne pepper to taste

Directions:

Step-1: Gather all ingredients.
